How to achieve culinary perfection

CIA: From noble beginnings to prestigious future

The Culinary Institute of America began its story in 1946- as the New Haven Restaurant Institute opens its doors. Being the first of its kind in the USA, the school was opened to train returning veterans of WW2 in the culinary field in order to help their transition to civilian life. While the school’s initial purpose was that of military rehabilitation, the founders Frances Roth and Katharine Angell had bigger visions: to create a center for culinary knowledge in the USA. With this goal, the school took leaps and bounds forward.

In the following years from its inception, the CIA would go on to be overwhelmed by applications, both from returning veterans as well as normal citizens wanting to gain a more prestigious culinary education. To cope with the increased numbers of students, the institute would go on to relocate and expand its campuses to ensure that all students had a dedicated place of learning. By the end of the 1970s, the institute would be known as the leader of culinary education in the USA with Life Magazine describing it as “The Harvard of Haute Cuisine.” in 1978

From the 1980s onwards, the CIA would continue to expand its curriculum and premises, with multiple student restaurants opening for undergrads to test their skills. The coming decades would also mark the school’s first West Coast expansion into California and the organization's own festivals and nutrition initiatives.

Fast forward to today, the CIA is considered the prime authority for culinary education in the USA and one of the most prestigious of the world, the alumni of the CIA have gone onto found some of the most luxurious restaurants in the world.

CIA: Proche

So now you understand the caliber of education we are talking about here, let’s get to the more important part: How can you achieve it?

Well, as mentioned, not all of us have the luxury of studying in the USA, or even leaving our house right now! However, recognizing this, the CIA has recently released its Prochef program- a series of extensive online courses that train aspiring chefs from the comfort of their own homes! Prospective students simply need to apply and will be guided to a course of their respective skill level (there are 3 in total!)

All of the famous chefs listed above have graduated from the CIA and have gone on to create amazing culinary empires and legacies- many of which (Bocuse for example) have continued to credit CIA to this day. The celebrity alumni and respect, combined with CIA’s long history and glowing reputation have meant that any certification from the institute is extremely highly regarded in the culinary sector.

Aside from the prestige of the educator, the main aspect of the course that sets it apart from similar courses in its field is the hands-on, customized experience that students receive from CIA. From the very beginning, students of the Prochef program are paired with a qualified adviser/instructor who will digitally confer with students and guide them through the course material based on the students' own experience and education.

At the end of the course, students will have expertise in a plethora of new culinary techniques, an insight into how successful chefs perfect their craft, and ultimately, the philosophy of creating perfect cuisine.
